Simple Recipe for Authentic Padang Rendang

Rendang is a renowned Indonesian dish known for its delicious flavor and rich blend of spices. Here is a simple recipe to create a tasty and aromatic Padang-style rendang at home.

Ingredients:

500 grams of beef, cut into small pieces
2 cans of thick coconut milk
2 bay leaves
2 lemongrass stalks, bruised
4 kaffir lime leaves
2 pieces of tamarind (asam kandis)
2 tablespoons of coconut oil
1 tablespoon of grated palm sugar
Salt to taste
Ground Spices:

5 red chilies
8 curly red chilies
6 shallots
4 cloves of garlic
2 cm ginger
2 cm turmeric
1 teaspoon coriander
1 teaspoon cumin
Steps:

Grind all the spices using a blender or mortar and pestle until smooth.

Heat coconut oil in a pan. Sauté the ground spices until fragrant and cooked.

Add the pieces of beef, stir well, and let the meat change color.

Add bay leaves, lemongrass, kaffir lime leaves, and tamarind. Stir to combine.

Pour in the thick coconut milk, stir gently, and let the rendang come to a boil.

Reduce the heat and let the rendang simmer until the coconut milk reduces, and the spices penetrate the meat.

Add grated palm sugar and salt to taste. Stir well and cook until the rendang thickens and achieves a deep brown color.

Remove the rendang from heat and serve it in a serving dish.
